Savory Chicken Couscous makes a delicious alternative to rice or potatoes. This easy dish cooks up in less than 10 minutes with very little effort and goes well with meat, poultry, pork, and fish.
Couscous may look like a grain, but it is actually a pasta made of semolina wheat. If you are unfamiliar with this age-old pasta, I recomment reading over my short couscous article which includes its history, preparation, and cooking tips for novices.
Make sure you are buying quick-cooking couscous as opposed to the Lebanese variety. The quick variety looks very much like grits or white cornmeal and cooks up very quickly. The pearl or Lebanese style does indeed look like baby pearls or peas and will take much longer to cook.
Savory Chicken Couscous Recipe
1/4 cup minced sweet onion
2 Tablespoons butter
1-3/4 cups chicken broth
1 teaspoon fresh lemon juice
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1-1/2 teaspoons kosher salt
1/2 cup frozen baby peas
1 cup plain quick-cooking couscous
Gently saute the sweet onion in the butter until the onion is translucent. Add the chicken broth, lemon juice, onion powder, garlic powder, kosher salt, and baby peas. Bring to a boil. Remove the pot from heat, stir in couscous, and cover. Let stand for 5 minutes to absorb the liquid. Fluff couscous with a fork before serving.
This quick side dish goes especially well with Easy Chicken Piccata.
