You’re on a calorie-restricted diet but crave rich, chocolate brownies. What to do? Registered dietician and author, Tina Ruggiero comes to the rescue with this chunky chocolate brownies recipe that cuts the calories, yet still delivers that rich chocolate punch you’ve been craving. They’re sure to bring a smile to your tastebuds.
Yummy Chunky Chocolate Brownies
3/4 cup (90g) unsweetened cocoa powder
1/2 cup (60g) all-purpose flour
1 cup (200g) white granulated sugar
1/2 teaspoon salt
2 Tablespoons (28g) unsalted butter, melted, plus additional for brushing
2 large eggs, lightly beaten
1/4 cup (80g) prune puree
5 ounces (140g) dark chocolate (70% cacao), roughtly chopped
1/2 cup (56g) toasted walnuts, roughly chopped
Preheat oven to 350 F. Line an 8- x 8-inch (20 x 20 cm) baking tray with foil, leaving a 2-inch overhang. Lightly brush with butter or spray with vegetable oil spray.
Combine the cocoa, flour, sugar, and salt in a bowl. Whisk to blend.
In another bowl, whisk the butter, eggs, and prune puree together. Add the dry ingredients and stir just to combine. Do not overmix. Fold in the dark chocolate and walnuts. Spread into the prepared pan. Bake for 45 minutes or until set. Use the foil to remove the brownies to a cooling rack. Cool before cutting into sixteen 2- x 2-inch (5 x 5 cm) brownies.
