For a quick go-to meal, you can’t go wrong with shrimp. This is a light, yet satisfying meal popular in Venice bars that serve small plates (cicchetti), and it only takes about 15 minutes to make. Best of all, it’s a great choice for those on heart-healthy and diabetic diets, especially when served on a salad or as an appetizer. Mangé!

Venetian Shrimp with Garlic Recipe
1 pound of small shrimp, peeled and deveined
1 large lemon, juiced
2 cloves garlic
1 Tablespoon extra virgin olive oil
1 cup chopped fresh parsley
1/4 teaspoon fine sea salt
Bring a 4-quart pot filled with water to a boil. Boil the shrimp until they are pink outside and opaque inside, about 3 minutes. Remove from pot with slotted spoon. Toss with lemon juice, garlic, extra virgin olive oil, parsley, and salt.
Serve with some cooked polenta or top a green salad with this mixture.
Yield: 8 servings
