Orange Bacon Chicken Breasts Recipe

 

For a gourmet flair with few ingredients and little work, bake up these Orange Bacon Chicken Breasts in less than 30 minutes. The bacon keeps the chicken white meat moist while the orange marmalade glaze makes a delightful contrast to the smoky flavor of the bacon. This is a great go-to recipe for a quick dinner entree. Add a couple of side dishes, and you are good to go!

Orange Bacon Chicken Breasts Recipe


1/4 cup (1/2 stick) butter, melted
1 Tablespoon Worcestershire sauce
1/2 cup orange marmalade
6 to 12 slices thin-sliced bacon (see Notes)
6 boneless, skinless chicken breasts
1/2 teaspoon poultry seasoning
Salt and freshly ground pepper

Preheat oven to 400 F. Line a shallow baking pan with non-stick foil. (Omit foil and reduce temperature by 25 degrees if using a glass baking dish.)

Melt together butter, Worcestershire sauce, and orange marmalade in the microwave for about 45 seconds on high. Stir until combined. Set aside.

Place the bacon in a single layer between paper towels on a plate. Microwave about 60 seconds to render out some of the fat. You want it about half-cooked, but still pliable enough to wrap the chicken. You will need to do this in batches. (Microwave temperatures vary, so keep a close eye to avoid overcooking.) Let cool until you can handle it.

Sprinkle each chicken breast evenly with poultry seasoning, then season generously with salt and pepper. Wrap each chicken breast with the bacon so that it is covered and place in baking pan with bacon ends tucked under. Pour the marmalade mixture evenly over the bacon-wrapped chicken.

Bake until bacon is crisp and chicken tests done in the center (165 F.), about 25 to 30 minutes. (If the chicken breasts are thick, bake an additional 5 to 10 minutes.)

Yield: 6 to 8 servings

Notes:
• The amount of bacon is going to depend upon the size and thickness of the chicken breasts.

• If the chicken breasts are large and meaty, slice crosswise into 1-inch-thick slices to serve. This will give you more servings as well.
