Oatmeal Cookie Brownies Recipe


Oatmeal cookie brownies sport a base of oatmeal cookie topped with a luscious brownie layer. This has to be the ultimate comfort food dessert mash-up ever! If you like chewy, fudgy brownies, this is the recipe for you. Whip these up in a snap using your food processor, and you’ll be drooling in no time.

These are cut smaller because they are so rich, but feel free to indulge in larger slices if you are feeling decadent. If you are unable to use walnuts, substitute pecans, peanuts, or omit them completely.

Oatmeal Cookie Brownies Recipe

Oatmeal Bottom Layer:
1 stick (1/2 cup or 8 Tablespoons) cold butter, cut into 1/2-inch pieces
1/3 cup firm-packed dark brown sugar
1/2 cup all-purpose flour
1-1/2 cups quick cooking oatmeal
1/2 teaspoon salt

Brownie Layer:
3 ounces unsweetened chocolate, chopped roughly into 1/2-inch pieces
1-1/4 cups granulated sugar
1/2 teaspoon salt
3 large eggs
1-1/2 sticks (3/4 cup) cold butter, cut into 1/2-inch pieces
1-1/2 teaspoons pure vanilla extract
3/4 cup all-purpose flour
3/4 cup chopped walnuts, optional
1/4 cup minature chocolate chips

Preheat oven to 350 F. Line a 9 x 9-inch baking pan with nonstick foil.

To Make Oatmeal Bottom Layer:
Place cold butter, brown sugar, flour, oatmeal, and salt in the bowl of a food processor fitted with the metal blade. Pulse about 10 times until the mixture is crumbly. Small bits of butter may still remain. Do not over-process.

Press mixture into the bottom of the prepared pan and bake 10 minutes, until lightly browned. Let cool about 5 minutes while making the brownie layer.

To Make Brownie Layer:
Place chocolate, sugar, and salt in the food processor and process until finely-chopped. Add eggs, cold butter, and vanilla. Process until well-combined. Add flour and pulse until combined. Stir in walnuts and chocolate chips by hand.

Spread brownie mixture evenly on top of oatmeal layer and bake about 35 minutes until it tests done. (A toothpick inserted in the center should come out clean.)

Cool to room temperature before cutting to serve.

Yield: 36 brownies
