Loco turkey meatloaf will make happy campers out of all those Doritos®-lovers out there. These popular chips add a ton of flavor to normally bland turkey meatloaf. To further enhance that South-of-the-border flavor, I’ve added salsa, cheese, and green chiles. It’s all of your favorite Mexican flavors wrapped up in a meatloaf, and it couldn’t be easier to make. The smell alone while it’s baking will make you drool.

If you are not a fan of ground turkey, you may substitute ground chicken. However, the ground turkey gives a richer, meatier flavor, so I hope you’ll stick with it. It’s also relatively inexpensive, comparatively-speaking.

I know some people have a love-hate relationship with cilantro. That “soapy” flavor that cilantro-haters often experience actually cooks out and mellows as the meatloaf bakes, so please do not omit it. Cilantro, along with cumin, gives that classic taco flavor that everyone loves.

Loco Turkey Meatloaf Recipe

2 large eggs
1/2 cup prepared or homemade chunky salsa (spicy or mild), divided use
1 cup diced onion
1 small can (4 ounces) diced mild green chiles
2 Tablespoons minced fresh cilantro
1 teaspoon Worcestershire sauce, optional
1 teaspoon kosher salt, or to taste
1/2 teaspoon ground cumin powder
1/2 teaspoon garlic powder
1/2 teaspoon chili powder (not ground chiles)
Freshly ground pepper to taste
1/2 teaspoon mesquite liquid smoke, optional
1/2 pound fresh bulk turkey breakfast sausage
1 pound fresh ground turkey
2 cups crushed Doritos® Nacho Cheese (or your favorite flavor) tortilla chips (measured after crushing), divided use
1 cup fine-shredded Monterey Jack cheese, divided use

Preheat oven to 375 F.

Break the eggs into a large bowl and lightly beat them. Add 1/4 cup of the chunky salsa, chopped onion, diced green chiles, cilantro, Worcestershire sauce, salt, cumin, garlic powder, chili powder, pepper, and liquid smoke and whisk to combine to combine.

Add the breakfast turkey sausage, along with the ground turkey, 1-3/4 cups of the crushed Doritos®, and 1/2 cup Monterey Jack cheese to the salsa/egg mixture.

Use a large dinner fork (or your hands) to mix until combined. (Mixture may seem a bit loose, but will firm up when cooked.)

Place the meatloaf mixture in a 9 x 9-inch loaf pan, and pat down firmly. Top with remaining 1/4 cup salsa, 1/4 cup crushed Doritos®, and 1/2 cup Monterey Jack cheese.

Place the loaf pan on a rimmed baking sheet just in case of any bubble-ups. Bake in the preheated oven for 1 hour. Drain off liquid, if any, then let rest 15 minutes before slicing. Serve with extra salsa on the side, if desired.

Goes great with Spanish Rice.

Notes:
• Try substituting bulk pork sausage for chicken sausage for a more robust flavor.

• Pepperjack cheese or any Mexican blend cheese may be substituted for the Monterey Jack.

• Regular tortilla chips may be substituted for the Doritos®.
