Fabulous Macaroni & Cheese is a comfort food sure to invoke memories of youth. It is made completely on the stove-top in about 20 minutes, and requires no baking. Sharp Cheddar cheese plus Parmesan provide that full cheesy flavor to satisfy your craving.
If you are short on time and need a quick side dish, this is the perfect choice. Did I mention that kids love it?
Fabulous Macaroni & Cheese Recipe
2 cups macaroni pasta (textured elbows, shells, or twists recommended and smaller shaped pastas work best)
3 large eggs
1/4 cup heavy cream
1/2 teaspoon Tabasco sauce
1/4 teaspoon ground mustard powder
1/2 teaspoon Worcestershire sauce
Salt and freshly ground pepper to taste
2 Tablespoons butter
1/8 cup grated Parmesan cheese
8 ounces fine-shredded extra-sharp Cheddar cheese
2 Tablespoons chopped chives, optional
Bring a large pot of salted water to a boil. Add the macaroni and cook until al dente (firm to the bite).
While the macaroni is cooking, whisk together eggs, heavy cream, Tabasco sauce, ground mustard, Worcestershire sauce, salt, and pepper. Set aside.
Drain the pasta and return to the hot pot. Immediately stir in the butter, shredded Cheddar cheese and Parmesan cheese, along with the egg mixture. Continue to stir over medium heat until cheese is melted and eggs are cooked. Fold in chives, if using.
Yield: 4 to 6 servings
