Drunken Spareribs Recipe


4 to 5 pounds spareribs
1/4 cup bourbon
1/4 cup soy sauce
1/2 cup brown sugar
2 Tablespoons Dijon mustard
2 Tablespoons ketchup

Preheat oven to 350 F. Line a deep roasting pan with foil. Insert rack.

Check your spareribs. If your market has not done so, remove the thin membrane on the backside of the ribs.

Whisk together bourbon, soy sauce, brown sugar, Dijon mustard, and ketchup. Warm gently, stirring often, until sugar melts. Let cool for 5 minutes.

Brush both sides of the spareribs with sauce, reserving the remainder of the sauce for basting.

Place spareribs on the rack in the prepared pan. Roast about 1-1/2 to 2 hours, turning once midway through cooking. Baste every 30 minutes, until tender. The meat should be shrinking away from the bone. Let spareribs rest for 10 minutes before cutting.

Serve with any remaining bourbon barbecue sauce on the side. I love classic Mustard Potato Salad and Kaleidoscope Salad as sides.

Yield: 4 servings

Notes:
• If you do not eat pork, substitute beef ribs with equal success. You may need to extend the cooking time a bit longer.
