Leftover pizza for breakfast may appeal to many, but it’s not for me. Try this version of breakfast pizza that includes bacon, sausage, and eggs on a thin crunchy crust of biscuits. It’s a hearty and filling meal that is easily adaptable, as you will see from my notes below. If you have any leftovers, pop them into a toaster oven on a foil-lined pan to reheat at 400 F. for about 15 minutes.
Deep Dish Breakfast Pizza Recipe
2 Tablespoons plus 2 teaspoons butter, divided use
1/2 cup plain panko crumbs or untoasted dried homemade bread crumbs
5 slices bacon
4 small cooked breakfast sausage patties or 6 breakfast sausage links
1 cup fine-shredded Cheddar cheese (or your favorite cheese blend), divided use
8 large eggs
3/4 teaspoon dry mustard powder
3/4 teaspoon fine-ground onion powder
2 Tablespoons heavy cream or milk
1/2 teaspoon hot pepper sauce, optional
1/3 cup sliced green onions/scallions (may substitute 1/8 cup chives)
1/4 cup diced roasted red peppers (jarred is fine)
1/4 cup fine-grated Parmesan cheese
Sweet Hungarian paprika, optional
Melt 2 Tablespoons of the butter and pour into a 9- x 13-inch glass casserole dish. Swirl or brush to evenly coat the bottom of the dish and slightly up the sides. Set aside.
Melt remaining 2 teaspoons butter in a heavy skillet over medium heat. Add panko crumbs. Stir constantly until lightly browned. Set aside.
In the same skillet, cook bacon until crisp. Drain on paper towels. Crumble into chunky pieces.
Drain bacon grease from the skillet and wipe out with a paper towel. Brown the sausage in that same skillet to release any excess grease. Drain sausage on paper towels and chop into 1/2-inch pieces.
Preheat oven to 425 F.
Whisk together eggs, dry mustard, onion powder, heavy cream, and hot pepper sauce. Set aside.
Stir maple syrup into the hot water. Combine the hot water with the baking mix, stirring 20 strokes with a dinner fork. Do not overmix. Press the dough into the bottom of the prepared casserole dish and slightly up the sides to form a crust. It will be a very thin layer barely covering the bottom of the pan. This is correct.
Sprinkle the bacon bits and sausage pieces over the bottom of the crust. Top with half (1/2 cup) of the Cheddar cheese. Carefully pour egg mixture over the cheese in an even layer. Sprinkle with sliced green onions and roasted red peppers. Top with remaining 1/2 cup Cheddar cheese, browned panko crumbs, and Parmesan cheese. Sprinkle lightly with paprika.
Bake for 20 to 25 minutes until crust is golden and eggs are set in the center. Let rest for 10 minutes before slicing to serve.
Yield: 8 servings
• Save time by using pre-cooked or leftover cooked bacon.
• Feel free to modify the amounts to suit your tastes. Bulk ground sausage may be substituted for the sausage patties or links. Chicken or turkey sausage or ham may be substituted. Use all sausage or all bacon, if you wish.
