Cheesy Breakfast Strata is perfect for breakfast, brunch, or as a light dinner with a salad. Swiss cheese, chives, and bacon give a kick to bland potatoes and eggs. The flavor is fabulous, and it is even good at room temperature. It has to be good with three kinds of cheese and bacon!
Waxy potatoes, such as Red Rose or Yukon Gold, are preferable because they hold together and don’t break down like mealy potatoes (Idaho, russet, etc.). However, the choice is yours. Turkey or veggie bacon may be substituted.
This recipe is easily doubled for a 9- by 13-inch pan or casserole dish.
Cheesy Breakfast Strata Recipe
1 large red potato, boiled, peeled, and cut into 1/4-inch slices
1/2 teaspoon kosher salt
1/8 cup chopped chives or sliced green onions (scallions), divided use
1/8 cup real bacon bits or chopped ham, divided use
4 to 6 slices baby Swiss cheese (enough to cover potatoes)
6 large eggs
1/3 cup heavy cream
Kosher salt to taste
Freshly ground black pepper
1/2 cup fine-shredded Cheddar cheese or cheddar Cheese blend
1/8 cup grated fresh Parmesan cheese
Hungarian sweet paprika
1 large tomato, sliced, optional
Fruit of choice, optional
Preheat oven to 400 F. Grease a 2-quart round glass casserole dish (about 9 inches in diameter) or a 9 x 9-inch square glass baking dish.
Layer potatoes in prepared glass baking dish. Sprinkle with kosher salt, half of the chives or green onions, and half of the bacon bits. Layer Swiss cheese slices evenly over potatoes.
Whisk together eggs and cream until frothy. Pour over the Swiss cheese layer. (The eggs will seep down a bit into the potatoes.) Sprinkle with salt, pepper, remaining bacon, remaining chives, Cheddar, and Parmesan cheese. Dust lightly with paprika.
Bake uncovered about 20 to 25 minutes until eggs are set, cheese has melted, and potatoes are heated through.
Serve cheesy breakfast strata with tomato slices and your favorite fruit.
Yield: 4 to 6 servings
• If you have leftover whole baked potatoes, by all means use in this recipe. To speed things up, you can cook the potato in the microwave for 4 to 6 minutes on high.
