Apple Pecan Squares are the perfect answer as a dessert for a large gathering. As you can surmise, apples and pecans are the stars of this delicious, moist cake. The recipe makes enough for a crowd, so it is perfect for potluck dinners, parties, and family gatherings.
Although any apple variety will work in this recipe, I prefer a sweeter, firm variety such as Fuji, Honeycrisp, Gala, or Jazz.
Nectarines or firm walnuts will also work. Or try experimenting with your favorite nut variety.
Apple Pecan Squares Recipe
1 large baking powder)
1 cup white granulated sugar
1 cup brown sugar
1 teaspoon cinnamon
2 cups all-purpose flour
1 cup (2 sticks or 16 Tablespoons) butter, melted
1 teaspoon vanilla extract
2 large eggs
1 cup Texas pecans, chopped
Peel the apple and remove the core. Dice the apple flesh into 1/2-inch pieces. Sprinkle the baking soda over the apples and set aside.
Thoroughly blend the white sugar, brown sugar, and cinnamon together, and add them to the flour. Stir in the butter followed by the eggs and vanilla extract. Combine well. Finally, stir in the apples, and pecans.
Pour into a greased 13- x 9-inch baking pan and bake at 350 F. for 40 minutes, or until a toothpick comes out clean. Cool the cake before cutting to serve.
